Listen, I know quality Prosecco isn’t terribly expensive, especially when compared to champagne, but it also ain’t cheap.

After a hard day at work and a long commute, I sometimes find that nothing will quite slake my thirst like a glass (who am I kidding, a bottle!) of Prosecco. There are two problems with this, though: either I’m on a bit of a budget (lookin’ at you, student loans!) or I just don’t feel like making that extra trip to the store. The other day I found myself in this exact predicament while staring blankly into my fridge and then it hit me…

…*ginger beer and vodka*.

> Without a moment to spare, I popped open a ginger beer, raced to the pantry for the vodka, and then tilted my head back like I was on spring break in Cancun. *Hola, mi amor…Te eché de menos…*

> *-Me*

Ok, so maybe it didn’t go *quite* like that, but it sure felt like it. While the flavor is obviously more ginger-forward than Prosecco, this cocktail still has the effervescence of Prosecco that we all know and love! Plus, it’s much easier on your wallet than a bottle of quality Prosecco.

Happy drinking! Be sure to make some [Party Nuts](https://amaraandrew.com/party-nut-recipe/) or gluten-free, dairy-free [blondies](http://amaraandrew.com/blondies), and/or [brownies](http://amaraandrew.com/brownies), so that you aren’t drinking on an empty stomach! 🙂

***Also, I know that this is pretty much a Moscow Mule without the lime, but hey, you wanna drink, don’t you?!***
