Listen, I know quality Prosecco isn’t terribly expensive, especially when compared to champagne, but it also ain’t cheap.

After a hard day at work and a long commute, I sometimes find that nothing will quite slake my thirst like a glass (who am I kidding, a bottle!) of Prosecco. There are two problems with this, though: either I’m on a bit of a budget (lookin’ at you, student loans!) or I just don’t feel like making that extra trip to the store. The other day I found myself in this exact predicament while staring blankly into my fridge and then it hit me…

Without a moment to spare, I popped open a ginger beer, raced to the pantry for the vodka, and then tilted my head back like I was on spring break in Cancun. Hola, mi amor…Te eché de menos…

Ok, so maybe it didn’t go quite like that, but it sure felt like it. While the flavor is obviously more ginger-forward than Prosecco, this cocktail still has the effervescence of Prosecco that we all know and love! Plus, it’s much easier on your wallet than a bottle of quality Prosecco.

Happy drinking! Be sure to make some Party Nuts or gluten-free, dairy-free blondies, and/or brownies, so that you aren’t drinking on an empty stomach! 🙂

**Also, I know that this is pretty much a Moscow Mule without the lime, but hey, you wanna drink, don’t you?!**

Description

While this recipe is obviously more ginger-forward than regular Prosecco, it still has that familiar effervescence that we all know and love!

  1. Combine the two ingredients together in a mason jar, swirl gently, and pour into a champagne flute or coupe glass. 
  2. Feel fancy AF and satisfied knowing that your wallet isn’t mad at you…for now.

*I know that this is pretty much a Moscow Mule without the lime, but hey, you wanna drink, don’t you?!
